I think I scalded him too hot as well because I had the skin tearing issue and I had a lot of feathers snap off on me so I was fussing with feather stubs for way too long (wish I had one of those whizzbang plucker things, might have saved me a lot of time and fuss
).
I didn't let it sit but the meat was still great for roasting.
Anyone care to tell me the science behind letting the meat sit for 1-3 days?
