Processed my first meatie!

It was 8 weeks old, and the dressed weight with the giblets was 7lb 3 oz. I thought that was pretty good, but really have nothing to compare to since it's my first. I'm planning on doing the remaining two at two week intervals, with the last maybe being frozen whole and served for Thanksgiving dinner instead of a huge turkey.

Wow great job! We had 3 and did our first one Sunday and I have two more to go--I was going to do the same thing and keep the last one to cook whole!

I need to process 4 roosters in the next few weeks. I shouldn't imagine its much different than cleaning a duck. I intend to use the entrails as catfish bait as I hear it works real good.

The catfish bait is a good idea! I hadn't thought of that, so they have already been buried in the garden, but will freeze those from the next two. However, I am eating the heart, liver, and gizzard myself. DH doesn't like them, so I get them all to myself.
