Processing Australorps

I hang them by the feet and cut the artery in the neck. They bleed out fast and it keeps them from flopping around in the dirt. As far as the wing feathers, I scald them in the 150 degree water until the large flight feathers in the wings pull out with no resistance. Just lift the bird out of the water by the feet and grab a wing tip feather with the other hand. If you can pull it and move the birds wing, put it back in the water. If the feather just comes off when you pull, you're done. Take them out of the water and pull those feathers first, since they would normally be the hardest ones to remove. The rest will easily just wipe off.
