Processing Cornish x Rocks, when?

Sounds like youve already got the answer to your question, but just in case theres any doubt left , we can tell you for certain that they are not white leghorns, and I would agree that they are probbally jumbo cornish x rocks.
We have both, our leghorns are a little over a year old. they are very slim and streamlind, and are amung our best fliers. our cornish x rocks are only a week old so comparison is a little hard (and this is the first group of them that we have had)

I can still pickup my 7wk old leghorns with one hand. My cornishX the same age are like soccer balls.
It looks like you have some nice chicken dinner.
