Processing Day Coming up QUICK

I've been doing processing for a couple of years now, and still, if I'm keeping the skin on I take about 25 min per bird after plucking. maybe time yourself for the first one you do, and see how many you can realistically get through in a day. watch some youtube videos on how best to do it.

I don't have a thermometer for the water, but if you've got a huge pot of water it should be steaming, but not boiling. the little bubbles should be just starting to let go of the bottom of the pot.

to test if the feathers are ready after dunking and swishing try pulling out the large feathers on the wings they should pull out easily when it's ready.
 
Our broilers are ready to be processed! My husband and I will be processing 10-15 on Tuesday. We have only ever processed 5 turkeys (last year and it took ALL day) and don't have a plucker. Any tips/tricks to get it done quick and effiently without a plucker??
Also any favorite bags for storage out there?
Good morning! WalMart stocks open top gallon plastic bags. Double them for freezer storage. If the broilers are too large for the gallon bag, we keep a roll of plastic wrap and a roll of freezer paper for the big birds.
