A PCquestion-- as I know someone on this thread will know--- how did I activate screen shot? Why did it copy aBYC page about 100 times, and I could not shut it off! It made m curosr go wonky . . .

Pressing print screen on the keyboard will save a screen shot to your Document folder.
 
I baked the first chicken I processed today for dinner. 300F for 2 hours, with a rub of butter, sage, rosemary, salt and pepper, garlic powder. Differences are subtle, but wow it's eye opening. I really understand what people mean now about the texture being firmer. It isn't tough in the slighest, it was juicy and tender. I always make gravy with the drippings, and made the best gravy I have ever made! Usually with the store bought chicken, the gravy ends up with a bitterness that I have always lamented as I lack the culinary knowledge to counteract it. This gravy had none of that bitterness, it was amazing.

He ended up sitting in the fridge for around 72 hours. I hadn't planned on so long, and only plan on 48 in future.

The meaties below were processed by hubby and me today. In this picture they were 7 weeks old. Today they were a day shy of 8 weeks old. They dressed out at 5.5 lbs for the 2 hens and 7-7.5 lbs for the 4 Roos. Fed Fermented Feed and I swear I used only 1/2 the amount of feed I normally go through when I used to use dry! Best looking meaties I've ever raised!

ISnt it an amzing flavor-- a totally different meal htan store cornishx. Gravy is my favorite part of a meal-- and I like that of the home grown bwtter , too. Seems to be less of it though-- maybe because the carcass is not injected with salt solution.

No harm in letting it rest longer . . .

Wonderful to hear of a great sucess story-- the weights are right on target-- what hatchery did thee chicks come from??
 
Patiently waiting for my little roos to grow big enough. They're acting like grown birds now
