Processing heritage turkey

I have 3 young turkey. All heritage. A blue slate, RP, and a narragansett. What is ideal age to process. Breeder told us that they take 18 months to mature.

MIne had a good size at 10 months--I like a very large bird when I have a choice. Younger and smaller taste just as good.

5 to 6 months my blue slates weight was:
small hens 9 lbs.(average was around 12)
large toms 21 lbs.(average around 16)
dressed.

I processed a 9 month old Bourbon Red Tom and if I recall correctly he was roughly 17 or 18 lbs.
