Processing Quail today, Have a question.... **PICS!!*

Hello, I was wondering after I process my quail today, do I put them in the fridge or freezer? Also, someone told me to brine them? If im supposed to brine them, what do I brine them in? Any help would be awesome! Thank you.

We brine them in a cooler with salt and ice/water. After butchering/cleaning we put them in the cooler, salt them down and cover with ice. I leave them for at least 24 hrs up to 48. I then , bag, freeze. If I were doing just a few, I would clean, put in large bowl, salt cover with ice/water and set in fridge for 24/48.
 
How much salt do I put in there?

I only did 3 today since it was my 1st time processing anything (Im just a teen lol) and I want to make sure the meats not tough. I messed up on the 1st one and accdentally cut his leg off lmbo.

Oh, when I opened one up, it had 3 different sized orange-ish balls in it. Was it a female? Were they eggs? I vent checked it and white foam came out?

Well, two orange balls are testes...so three might be a hen but if the vent was foaming on it's own you might have had a tri-teste quail..from what I read on here a hen's eggs on the inside look like a grape cluster with different sizes. too bad there isn't a pic!
