After soaking for 24 to 48 hours, do you super dry your meat before freezing to help avoid future freezer burn? If so, what do you use for the drying? Paper towel/ towel/ time? I'm new so I'm curious about best practice etc. Thanks

Actually, if you want to keep them from getting freezer burn....use a empty, cleaned milk carton(paper/cardstock) type. Put the processed birds in the carton and fill with water, then freeze. They will keep longer and won't be freezer burned when you thaw them out.

I've been planning to use shrink bags when I start processing https://texaspoultryshrinkbags.com/collections/poultry-shrink-bags
They say that you can get 2 birds in the 7x12 bags and 3-4 in the 10x12. Have you tried those? I'm not sure how much water would stay in the bag when sealing them, though.

I don't soak them at all. I put them in an open freezer bag in the fridge for 2 days then vacuum seal and into the freezer they go. Are you soaking them in brine?
The first ones I didn't soak at all. Straight in to the freezer after processing. The second time I just soaked them in a bowl of spring water for 24 hours in the fridge. But I later read that someone was using a vacuum sealer to avoid freezer burn, so I was wondering how much of an issue it was, and how more experienced people were addressing or avoiding the potential issue.

I have never heard of this. Very interesting!

This is how I always freeze fish even just in a heavy-duty freezer bags filled with water never tried it on anything else. I use a vacuum sealer on everything else I do a lot of venison.
