processing RIR roosters

I have four RIR roosters sixteen weeks old,I have processed cornish and black broilers but not the RIRs,should I process them very soon or wait untill they are 20-22 weeks old,they are beginning to crow a bit,I want to process them at the best age and weight,thanks ,,

I always wait alittle longer til they have more meat on their bones, but I also only stew or crockpot them.

We are doing some this weekend that are probably 25 to 30 weeks old. They are huge.
