Hi, any ideas how to profit from surplus quail eggs? Hatching eggs ok. Pickled quail eggs sound nice but are restricted for sale without a permit in my state due to pH of brine.

I'd look for people who own reptiles/ferrets. I used to sell 2 dozen for 20 bucks every couple months to a gal who gave them to her ferret
 
There may be a market for balut in your area (myshire farms has a YouTube video on it). Selling hatching eggs on eBay, Etsy, etc or through your local print or online classifieds might be an option. I can’t imagine boiling and peeling eggs for pickling! I just did 45 eggs for deviled eggs for a potluck, spent 2 hours just peeling eggs!
 
I've sold hatching eggs and have a repeat customer who buys a dozen eggs every once in a while for their snake. The only times I've pickled quail eggs was for my own consumption and to share with family. I can't imagine trying to do that for sales. Too tedious even with a quail egg peeling machine.
 
Try marketing them as natural dog treats/supplements. I was reading about somebody on Facebook yesterday that has customers buying eggs for dogs.
