Proper way to store eggs?

Better safe then sorry, always refridgerate!...If you want room temp eggs, you can always refridgerate them and then pull out eggs you want to use and let them warm up for a few hours. I get 15-18 eggs a day, I never leave them on the counter! I sale my eggs as well, and I have many people who love my farm fresh eggs and I've never gotten sick from any of my eggs.

We always leave our eggs on the counter for a few days before putting them in the fridge. Fridge eggs ( aka older eggs) are for boiling and counter eggs are for baking/scrambling/frying.

We also don't wash them until right before we use them.

I agree. A lot of baking recipes call for room temperature eggs. I also heard that washing them takes a protective coating off of the eggs, however, it is good to wash the outside just before use.

Much of the rest of the world does not refrigerate their eggs. The reason Americans are brainwashed into thinking eggs should be refrigerated has to do with the powers that be disallowing eggs to be sold commercially without washing; washed eggs lose the bloom, and the chemical bloom substitute placed back on the egg doesn't work nearly as well as nature's version.

But hey, sheeple away!

I'm not brain washed and I DON'T agree with you! I sale my eggs and I'm going to do the best and safest thing for my costumers, of whom are very satisfied! If my eggs do happen to be dirty, I will rinse them in under warm running water! I also air dry, not towel dry! What this really comes down to is personal choice, and if your comfortable eating an egg that's been sitting on the counter possibly 2 weeks, more power to you!......If you DO refridgerate, it's a very SAFE way to store your eggs and that's great too!
