Pullet Eggs In Banana Bread Recipe

I had brought entirely too many bananas about a week or so ago and I got the bright idea to make banana bread. I found a recipe and it calls for 3 eggs. Now, my girls are just starting to lay so their eggs are small ATM. I weighed some of their eggs and they seem to average at around 1.3 oz. How many should I use to equal roughly the same amount as 3 large eggs?

Google says a large egg averages 2oz so that would be 6oz for 3 large eggs.

Your pullet eggs average 1.3oz, so you would use **4.6** eggs, I'd round up to 5 eggs in the recipe.

So I ended up only needing to use 4 eggs. The bananas I used were fairly large so I think that added extra moisture. Thx again!

I saw banana bread & was hoping you'd post the recipe - thank you! I have wondered the same with eggs as I only get small bantam eggs. Guessing and/or rounding down (like you did) usually works for me, too!
