Purpose of various Breeds

Being a somewhat newbie, I really enjoy learning about all the different breeds. However, I’d like to hear some reasons / purpose for so many different breeds.

One that I just learned about is the Whiting True Green. The description does say they have “an astounding feed to egg conversion” -and apparently the feathers are used in Fly tying. But a whole new breed to increase feed conversions?

Just wondering in general - not specifically this breed but any that closely overlap in characteristics (besides breeding for just different feather colors).

Whiting True Green were developed for fly tying more than feed conversions.
They’re just the green egg laying version as opposed to the blue.
But there is a lot of overlap because they aren’t a true breed.
Just a mutt someone bred with a purpose.
Someone was inspired and started a very specific project. They aren’t widely bred with a specific standard in mind like a true breed.
