Where is the best place to cut the head off? Is it right under the beak?

Quail is delicious. My uncle raised quail and I had it then. I have some scheduled for the table.

I would like some Bob Whites too.

How long does it take to cook/bake/roast quail?

Can someone explain something for me? If jumbo coturnix are 14 ounces live and they dress out to at least half a pound each, how do people eat three to six per meal? I was thinking one or possibly two if it's 8 ounces minus bone.
