That looks like cecal poop, where part of the intestinal lining is shed. It's normal to get one or two of those a day. Do all of her poops look like that?
Well I’ve first noticed it today (her poop has been normal for her the other days). I noticed that poop, and also a few liquidy ones. But those aren’t her usual.

Despite that though, she seems pretty quiet today and sort of fluffy. Eating, bathing, and walking normally. She’s always been shy but today seems pretty different. Keeps finding corners to stand in.

Two years old is getting old for a coturnix quail, so it could be that she's creating less cecal poop than a younger bird would.

I did do a quick search of your previous posts to see what "previously recommended quail feed" was, but didn't find it. What are you feeding her?

That sounds like she's not feeling well. Any symptoms in her covey mates?

Heygates Quail feed

I would separate her and put her in a warm, dim place for a while and observe her. You will be able to see how much she's eating and drinking, and get a clear picture of what her poop looks like (whether they're all like the one in your pic or whether it's just once in a while).

I do think that the one in your picture is cecal poop, but if the rest of them are watery, it may indicate that she's not eating.
