What are the behavioral signs of infection that I should look for while my silkie chicken is in quarantine? I know about the other signs (crusty nostril, mucus drainage, mites, scaly legs, congestion, etc.), but haven’t read about any behavior I should be watching out for.

I'm not sure. I can tell you I'd be looking for activity level, whether they're sluggish, whether they sit with their feathers all ruffled, things like that. Anything that appears "off." Plus I'd take a look at their poop.
