Question about chicken organs found in bird? (See photos included)

I will defer to others on that. Most likely I would eat it - not the balls, its a texture thing - but like the proverbial Mikey of once cereal fame, "He'll eat anything" (once).

Are pekins melanistic? I'm not familiar with ducks but I've processed silkie crosses who had grey or even marbled testicles.

That's an excellent thread, which includes this excellent link (which didn't actually answer the question, btw).

Apparently, discolored testes have numerous potential causes, some perfectly mundane, some indicative of disease, injury, infection - and some species of bird **seem** more prone to it than others. I would not eat those (but I said that already). Assuming no indications of illness in the bird otherwise, I'd take my chances with the rest of the meat assuming good sanitation practices were followed during butcher and aging in the chill chest.
