I have a breeding pen, and last night I noticed one chicken had gotten out and was in the group pen. I put her back in with the breeders but want to know if I can still collect an egg from her for the next day or 2, or could she have been fertilized by the other " undesirable" males. I'm going to incubate in the next few days and wanted a few eggs from her. I know because she got out I need to wait 4 weeks to collect her eggs for them to be pure, but will they still be pure for the next 2 days?

If she mated with the undesirable rooster then it will be tomorrows egg that is fertile by him.. To be safe I would not collect her eggs until a few days after you verify she mates with the Rooster you want her too.
