Question about fermented food

I started supplementing my birds food with some fermented feed with fairly good results. I am having trouble with sunflower seeds though. Whenever I put them in the jar they float to the top. As I understand it, everything needs to be submerged in at least an inch of water. Anybody have any luck fermenting sunflower seeds? Should I leave them out? Thanks

I leave them in and they float around on top for a while. Then as the water gets absorbed I stir them down into the mix. I keep my fermented food kind of on the dry side. Just enough moisture to keep it wet but not a lot of liquid standing on the top. Works great!
