question about selling eggs and waiting list

Ive started to sell some hatching eggs locally. Sometimes I have 2 or 3 people suddenly wanting eggs. I sell them 6 at a time since I only have 2 hens. So yesterday, the guy that was supposed to pick them up couldnt, he had car issues. He didnt say weather or not he wants the next 6. I contacted the next person in line for the 6 I had already boxed up but she couldnt get here on such short notice. So I probably will just eat these, no biggy. My question is, if the guy that was supposed to get them Sunday wants the next 6, do I sell them to him or to the lady that should be getting them this weekend. I advertise as "next available 6". Technically, its still the guy from this past weekends turn. But he did cancel. If I collect 6 for him again, it would put the next lady in line back a week. I also have someone behind her. Should the Sunday guy be SOL and go to the end of the line? How do you handle waiting lists and cancels?
 
The way we handle Rabbit Waiting lists is if someone cancels, they get the next unclaimed. If you already have the lady picking them up on the weekend, she has waited her turn in my opinion. I know he didn't cancel for the heck of it, but he did cancel. I wouldn't hold her up just because he couldn't pick up his on time. I would get her her's and then the next 6 that isn't promised, those would be his.
 
You do get a sense of sales rhythm and pace. Sometimes, your frig is stocked with a a dozen dozen!!! (not yours, but ours')

We don't make calls. We just wait for the buyers to call, stop by, or pass the message. The only time we get nervous is when we're down to just a dozen or two. Just remember, that eggs in the store are typically a month old. Having week "old" eggs in your frig is still mighty fresh.
 
These are for hatching so they dont go into the fridge. Hatchability drops after a week or so. On a good day, they both lay. On a bad day, neither does. I try to send an extra or 2. Unfortunetly, I figured he should go back to the end. He was the one that canceled and I shouldnt hold anybody else up for something that he did.
 
That is the reason I don't keep a list......I don't want to have to worry about just this type of thing and trying contact everyone involved. I only list eggs for immediate shipment.
 
Communication. ASK him if he wants eggs by suchandsuch a date. Explain that if he doesn't then he at the back of the lineup.
 
just use your judgment.... there are very few people I let back on the top of our chick list if they don't return my email or make payment on time.

I sell my eggs for eating. I have regular customers on regular days. I make sure I have enough eggs for them, even if we have to go without for a few days. If it works that I don't have enough for some reason, then they are first in line when I do have enough. There are wishwashy people who want eggs occasionally, on random days. They get what I have, if I have it. Or not.
