I did the same thing today. I killed 2 roosters and put them in one of those "set it and forget it" things for 35-45 minutes. The meat was tough and stringy. Which I kind of was expecting.
Did you let the dressed bird sit for 3 days before cooking it? This is the key step in older birds... if you don't do this it's like chewing on an old tire even if it was slow cooked.
Slow cooked is like 1-4 hours at least as it needs to be cooked really low and of course slow.
Young roosters are probably the best tasting chicken out there if they are cooked right. Not even the Cornish can compare to the flavor that these birds develop over a 6 month period.
It really takes some practice and patience......
