If you're getting them at the grocery store, I'd bet they're older than you think they are.

I’ve looked at the codes on the cartons at the store (Julian Calendar package dates) and they’re generally a month earlier.

Too old apparently. I had read you could keep pickled eggs in the fridge for about 4 months. I really thought they would last much longer. I had some I had pickled last summer when I went into one of my “boiling eggs like a madman episodes” and decided to eat some a few days ago. I ate 3 and my pup ate 3. They tasted fine, smelled fine, went down fine, but coming back out not so fine. We both got sick.
It was a first for my pup, though. He normally in my floor from eating non-food type things, but this time I plainly saw egg white in the middle of the bile.
It’s okay, though, I think we bonded even more being sick together.
