Nearest hard edge. Counter, saucepan, forehead of the nearest person, etc...

I crack it on the glass stovetop usually. And crack it into a small prep bowl first, and not directly into pan or bowl if I am cooking (like into cake mix, etc.) in case there is a shard of egg shell or a blood spot or anything weird about it.

Edge of coffee cup, where it gets inspected before going into whatever it needs to be going into. It only took one rotten egg to learn that lesson.
