Spider plants. Except for watering them, they're fairly easy to grow and you don't have to worry about weeds on them. Just clip the babies off the mother plant, put them in water until they've got enough root, then put then in dirt and up the size of the pot as they out grow the original.

If this question is meant for garden plants only, then lilies. I just put the bulbs in the ground and let them grow and occasionally weed them. They're easy, but the bugs love them.
