What is GF stuffing made out of?

My MIL's stuffing recipe, but using home made GF bread for the bread cubes.

Tonight we're having smoked salmon pasta, and whole array of seafood such as calamari, smelts, mussels, etc. Honestly pretty much all fish, because in my culture you're not supposed to have meat on Christmas Eve (and no, according to the Italians, fish is not considered meat. )

Plus some nice tartufo ice cream and chestnuts for dessert.
