Rare. Without a doubt, rare.

My husband, however, always insisted on well done. Until we had a blackout while I was cooking. . . steak. I cooked it the way I liked it; he said it was so tender and flavorful, then the lights came back on. Horror, then acceptance, now a man who likes a rare steak.

My mother waitressed her way though college. The cook hated people who ruined a steak by ordering well done.
