Torchy's makes my favorite tacos! It's based in Austin, I think, and you can find it in other parts of Texas. My favorites were the baja shrimp taco, which has things like fried shrimp, slaw, and jalapeños in it, and the Independent, which had fried mushrooms and avocado and whatnot. The Independent was no longer available by the time we were getting ready to move out of Texas. I miss their tacos sometimes, but it's way too expensive to eat out at all now, anyway. When I make taco type stuff at home I just use standard taco seasonings for ground beef, but I always make tostadas instead of tacos. I prefer the mess. :)
 
Taco pro tip: Look into skirt or flank steak for your tacos. It's typically around the same price as 80/20 ground beef and so much better in tacos. slice or dice as fine as you want. and season and serve the same way. Marinated and grilled is excellent, but you can also pan fry.
