Question on butchered 22 Wk old light brahma.

We processed out first Roo Yesterday, He looked huge, but when dressed he appeared very thin too me ? Did we butcher him too early? The other question is when I cleaned him of his innereds, he had to egg shaped balls of fat on the inside that was snow white, I thought that they were eggs at first because of the shape and all but of course it couldn't have been that he was a roo. Is that normal or was there something wrong with him, he didn't appear to have much if any fat under the skin, I know he isn't really a true meat bird but I had to do something with him I have to many roos and they gotta go, How long should I wait for the others because I heard if you wait to long they will be tough and stringy, I dont know what he tasted like, I can't bring myself to eat him yet. He was well very well fed so I don't know why he was so skinny looking. So if anyone can give me any inform. about Dual purpose Roos I would appriate it . Sandy
Also his breast were tiny again they looked huge when he was alive.

its my experience that standard breeds, even the larger ones, are rather disappointing once the feathers are off. He'll likely be tastey if you can soften his tissues, but they'll never be anything like cornishx.
 
Yea, dual purpose birds won't be as big as the store birds. 16 to 20 weeks is a good time to process. The egg shaped things are what makes a rooster a rooster. (manly things)

He was a very manly man ! but I thought that they looked just like balls of fat and felt like it too. I would have thought that they would have been more firm? Oh well ya learn something new everyday. I was gonna wait on the others to see if they put on anymore weight, but I guess we will have to go ahead and process the rest as they are 22 weeks now. All of our LB roosters look scrawney once you get the feathers off.
It also helps to let the roos or any older bird sit in a pot of salty water in the fridge foe a couple of days before cooking. And then cook on low or use a crock pot .
