Will a broody hen with chicks guard her chicks from dogs, hawks, chickens, Etc. or will she just run away and flee!?

Depends on the broody. Some run away and leave the chicks to die, some will kill themselves to protect their young. Either way, a hen would not win in many battles against those.

Either way, the poor hen isn't capable of fighting predators- I doubt a rooster could either.

Mine have always held their own against the flock. She will lead the chicks to cover, best she can, but most of the other predators you listed are big threats to all chickens of all sizes.
