so i am just starting out with chickens and i am wondering if i get a couple different breeds of hens or pullets such as silkies, olive eggers, Rhode island reds, and barred rocks will i have to get a variety of roosters or can i just get one breed of rooster like a silkie?

You need males of matching breeds only if you want to hatch purebreds, which while I and many others would certainly encourage, isn't necessary. Of course if you're just wanting eggs there's no reason for a male at all.
