Questions about preparing bird after culling

My wife will hold the chicken upside down by it's feet bring the head up to the feet while holding with one hand slice the throat then bleed the chicken. She is very petite maybe 105 #'s and handles them very well. She will pluck them by pouring hot water over the birds while they are in the sink. We leave the skin on when roasting or making soup.

Wow I wish I could do that to, I just have a problem with that first cut or chop. I read in a book that when the time comes they seem to know their fate and calm down and that did happen when my friend did it. They actually fell asleep.
They sure do taste good and I did not let them set like MissPrissy told me. Next time.

I tie their feet and hang them by a cord. They become totally docile when hanging upside down.

As for dispatching them I use a SHARP knife. Razor sharp. Did I say SHARP?! You don't want to be sawing trying to cut. One quick stroke of the knife.

Thank you, one more question please, do you have to remove any feathers to make the cut or does the knife cut through it easily enough?

My friend plucked the feathers and that looked a little painful.

Take your hand on the neck and roll the feathers back so you can see the skin. Feathers can be tough. Even with a sharp knife you don't want to risk having to 'saw' through the feathers before getting the job done.
 
I've heard of hypnotising a chicken by putting his beak down on the chopping block and drawing a chalk line from his beak away. Or is this just a tall tale by my grandfather when I was a little tyke?
I remember he had a rectangular frame with two wires strung tightly from the diagonals. The chickens neck would be forced into the crossing point of the wires, with a guillotine effect.:eek:
