Questions about the creation and maintenance of 'wild' ACV

Next year if I have time I want to try cooking the apples, straining them through the tomato strainer, then add mother and water.
Is that to get the straining out of the way before the mix turns to booze or vinegar?
 
Straining out of the way, and the apples are thoroughly mashed. Plus that tomato strainer should be used more than once a year, and we are making fewer and fewer tomato sauce jars every year.
