Nice breeds you keep, all have the potential to be quite friendly! As mentioned above, chicks are very easy to socialize when still in the brooder. Lock up all danger in another room, laying down an old sheet and get the chicks out. Sit right in the middle and the chicks will naturally gravitate to your lap. This teaches them your lap is a safe place and turns the birds into lap warmers. As for grown up birds, sitting on the coop or run floor, (not outside, too stimulating and distracting) with a bag of meal worms or other goodies. Feed them from your hand extended, slowly working them closer to your lap. Pick chicks up often, carry them around the house, always have a firm hold so they don't fall.
Chickens general don't like to be held or touched much, but over time from a lot of picking up and handling them, they learn to tolerate it. Young birds are very nervous of leaving the ground, as they age they deal with being carried. Practice toweling them up too, wrap a towel round the back and come up around the chest, feet out, and lay them in your lap on their backs. This will need to be done if any medical procedures are needed and get them trusting you more.
Do all these things often and your birds will be more trusting and tame.
