Raising quail to eat, have a question

Ok so we bought some hatching eggs and got 6 females one male. Not sure how old they are now but on the day I decide to butcher one to try (first time), we also had 17 hatch, all healthy and active. My question is for someone who really likes chicken a lot. Have you tasted quail and liked it, loved it, or hated it? While dressing this one is smelled similar to squirrel (son tries everything don't judge lol) and I stupidly out it on the bbq, which I am horrible at. When I tasted a tiny piece of the leg it TASTED like squirrel. Not as strong but still the same flavor. Did I do something wrong? My intention was to get away from store bought meats completely but even my son did not like it. Gonna try again and cook it different, then try again when they new hatches are right at 8 weeks so they aren't as old as the one we ate last night. I have heard all good about the taste of quail but was not impressed!
 
It should be so good you barely get any yourself even when you raised the birds. People who visit me never forget to ask if i havw some extra quail In the freezer for them either. Ive only come across one person who 'doesnt like it' and shes never eaten it...
