Recipes for wild caught rabbits?

I thought you would loose a lot of meat by deboning it. Thanks MissPrissy. I will definately have to give some of these a try. Boy, are those rabbits in for a surprise..

MissPrissy, since you grew up near the hunting club, did you hear anything about eating rabbits in summer? I think as long as it was cook correctly, you should have to worry about what season it was.. I mean granted they would be more plump in certain seasons than others, but I don't think that's the issue they are addressing..

The thing with eating wild rabbit in the summer might be because of tularemia which kind of goes against this:

Maybe more folk wisdom.

Years ago, maybe from hunting magazines I read that tularemia was more likely to be contracted from butchering wild rabbits in the summer because the bacteria was more active. It isn't agreeing with disease web sites though.

Also there are hunting regulations to deal with.
 
One of our favorite ways to process wild rabbit was to clean it and smoke it. After smoking it we then cut it into serving sized pieces and pot roasted it real slow in a black iron pot with lots of onions, etc. Makes a fine brown gravy and some mighty fine eating.
 
Thanks for the links! I did see how it was funny how they contradicted with the advice in question. From what I read, as long as correct handling and cooking procedures are taken, it shouldn't be something to be worried about.

What does rabbit meat compare to?

I have never had rabbit and wouldn't have a clue to what it tastes like. Is it an acquired taste?

Remember my folks are not country or homesteader-type in any way. I grew up on the normal meats, you know the grocery store pork, beef, and chicken. I had my first taste of home-raised dual purpose rooster last month and really liked it.

This is making my hungry!
It has been a long time since I had any, but another way that I like it is to: After soaking in salted water, flour and brown it. Then, put it in a pan and lay a slices of bacon over it. Cover and roast until tender. Makes great gravy.

My husband always takes out the rabbits trying to feed on my garden. I am also raising meat rabbits for growing out our own. I am told these will have huge white meat thighs far better than wild rabbit. We'll see!
