recipes - quail soup?

so anyone got any good recipes for quail soup? or recipes that arent just "cook it like a Cornish hen"

id like to try making bone broth with them for it to. can i just toss the whole (gutted and skinned) bird in and stew them to do that?
 
I make soup kind of the long way. I start by putting the whole birds into water and simmering them until the meat is ready to fall off of the bones. I then pull the meat off and put it away. I simmer the bones with veggie scraps (celery tops, onion tops, etc) with a bit of salt, and I simmer it for hours (essentially making bone broth). Strain the broth and discard the bones and solid stuff.

Add the meat back to the broth, add salt, pepper, sage, thyme, and whatever seasonings strike your fancy. Sautee some onions, garlic, and celery in a pan until they're clear and aromatic, then add to the pot. Add whatever veggies you feel like (carrots, potatoes, turnips, for example). Cook until they're done. If you want to add leafy stuff (cabbage, spinach, etc), add them last and cook until they're done.

Don't go overboard on the salt, taste as you go until you like it.
