DH went to process one of the chickens (he's done about 12 so far) and the breast is really red, like it didn't completely bleed out or something- even though he did everything the same. Is this okay to eat, or should he not even bother processing it?

Nope, we don't scald or pluck, he just skins them.

I'd guess either a bruise that happened while catching/processing, or maybe a little blood left in the meat from an incomplete bleedout. Either way, red usually equals blood, so I'd say you're fine to eat it.
