Adopted an orange ringneck dove 4 days ago. He is acting fine, eating drinking, not fluffed up. Today I noticed some staining around his vent, rusty colored, but not much darker than his orange colored feathers elsewhere (except his bottom is white)

There are also lots of red droppings in his cage, but not watery. This evening they seem to be a fainter red, more brown.

No changes in food, he's getting what he came with. The only thing I changed was that I gave him some grit.

Is it internal bleeding? Stress? Parasites? The grit not agreeing with him? Ate more red dyed seeds than normal?

Attached photos, lighting isn't great, but the poop in the cage was much more red, what is pictured is from this evening.

My pigeons and doves poop red / orange droppings after they eat a lot of the pink / red coloured grit and minerals.

I guess your bird ate a lot of grit (as he craved it from not having it before) and you are seeing the result.

So long as he is acting normally I would not worry. If it is the grit colouring his poops it will clear up in a couple more days.. and from now on he won't binge on the grit, but just eat a little each day.

If it is from a parasite or disease he will start to act sluggish, fluffed up and not eat.. then you can take him to a vet. But, I am thinking that it is just the grit in this case.
