You can completely process a chicken in THREE minutes? That is truly amazing. I think I'm doing good to do ONE in 30 minutes, from picking it up out of the pen to sliding the finished carcass into the ice water, even with skinning instead of plucking.
One Acre Wonder, I think it's always better to work with someone else, if only to have better company than chicken entrails while you're working. But the number you can do alone depends on a lot of variables, such as your growing skill level, the weather, and the number of birds you hope to get out of the yard & into the freezer. It doesn't hurt to separate more than you may be able to process in one day, if you can't get to them all they will be more than happy to return to the pen to be processed another day.
