I remember learning of a technique to both kill a chicken and do so in a way that would assist in removing the feathers. The technique was to open the mouth of the chicken and with a sharp pointed knife stick the point in the back of the roof of the mouth and turn it one quarter. This would kill the chicken and at the same time the follicles holding the feathers would release the feathers. Does anybody know if that method is used today.

Glad you joined us!

From what I have read this method of killing is rather inhumane, and unreliable. As for the follicles ''releasing the feathers'' that is simply not true- No matter how you kill the bird.
We kill our birds by cutting the jugular. It is very quick and humane, and the birds bleed out well. After the bird is dead, we scald them in 140 degree water. The scalding process loosens the feathers and makes them easier to pluck.
Hope this helps.
