Mornin!
I processed 2 meaties Friday, and 4 meaties yesterday. Another poster mentioned the oil glands and I realized we had not removed them on ANY of the birds. Is it too late to remove them...will the taste of the meat already be ruined?

You can but I never did-tasted great to me -I did 25 last Fall

Oil gland is at the tip of tail-looks like a tiny bump-wartish looking

So it is not 100% necessary, and is more a matter of choice then?

Hmmm...what to do!?!?

yup up to you! Folks were helping me process and some removed them some didnt but I left mine on to save an extra step--Now On a turkey I removed them -had to help process 30+ this Fall and I was NOT pulling out those feathers that the wizzbang didn't take out had to use pliers to remove some and I wasnt wasting 20 minutes per bird!

Removing the oil gland is not a must, it realy doesn't effect the taste although I do remove it before cooking mainly for appearance. You didn't mees up so don't worry all is Ok.

Thanks everyone! I did remove it from the chicken we are having tonight. It was easy-peasy

. It almost seemed that it cut away easier and nicer from being firm and cold, so I think I'll do the rest before freezing them.

Thank you!

I haven't tried this yet but thought it was a good info video.

Look up "Polyface" on Youtube for other videos as well. Good info!
