I tried getting a video of her hunting but she wasn’t doing anything today, so I hand fed her. I wasn’t recording on time but in the first second of the clip you can see she missed the cricket the first time.

Oh dear. I see what you mean and that does not seem normal. Missed strikes are not uncommon, but it is usually very obvious the second a gecko recognizes food. I am not seeing any signs of visual recognition Do you have a reptile/exotic vet you can take Mango to for confirmation and advice?

Same as mine used to be.
Especially when it wasn't very hungry

I mean, I could be wrong, (I hope I am wrong) but I don’t see the focused look I usually see on my lizards when they recognize food.

Oh no I can do my best to locate one but locally there are only vets for dogs, cats, and rabbits.

No I haven’t. I had to hand feed her the entire first month of having her. When I got Tango she could catch things after a few tries but it’s obvious she doesn’t know what she’s doing but the other one does.

If she is eating and drinking then I don't see any reason why she wouldn't have a long and happy life with you. Maybe try checking some reptile forums to see if you can find anyone else with similar experience. Lots of people have special needs pets, and you could probably find great advice just looking online.
