Restaurant Waste

I have a co worker that does this for his hogs. He gets it free in 10 gal pals from company cafeteria.

I would think if the waste contains some animal protein in the form of fish, beef, pork, etc. that protein wouldn't be a problem.
If it is mostly bread or processed food, that could be a concern.
There are restaurants that keep chickens and feed all their waste to the chickens so it is a good way to reduce waste.

Anyone feed their chickens restaurant waste. What is the arrangement? What are the issues, eg. sufficient protein?

What "waste" are you referring to? Is it prep cook scraps, leftovers from the salad bar, uneaten patron food?

When you say "sufficient protein" are you referring to feeding the waste exclusively or as a supplement?

I get prep cook scraps from my work dining room, it's mostly veg trimmings and seed cores. Sometimes I get leftovers from the salad bar which might contain more protein as it can be old cheese or meats from the salad bar. I also get raw chicken trimmings that I bring home and cook and chop up before giving to the chickens.
So it depends on what kind of scraps you are getting how much protein it will contain. Mine get the scraps 2-3times a week as a supplement and they love it and go nuts when they see me coming with the bucket.

I get kitchen waste from a small vegetarian coffee shop/ cafe. I go every 2-3 days. My backyard flock LOVES them and will run to me the moment they see me carry buckets. They get veggie trim, fruit, breads, etc. indoor want them to eat too much carbs so I remove most of breads. Chickens also get my own kitchen and table scraps. When we have fish or shrimp, I cut the bones/shells so they can eat them without having problems. The bones provide them a good source of protein and calcium. I have a open compost bin I which I throw the waste and the chickens scratch in it all day. I also have a closed bin in which I dump stuff that I don't want them to get into.
