Resting time question?

So I'm going to be processing my first rooster in a few weeks, after cleaning its suggested to wait 48-72 hrs before freezing or cooking. Does resting in a brine still count as rest time? Or should it rest alone and then additional time in the brine?

Yup! Resting in brine counts as rest time. Just remember to modify your brine according to how long it will be resting in brine. (Don't use a 24-hour heavy salt brine and then let it rest in that for three days.)

No problem- a user on here (Egghead_Jr I believe), uses a very lightly salted water for a day or two rest and then uses a 24-hour brine of: 7oz of salt per 1 gallon of water. (7oz by weight, not volume, so use a scale). I have not tried that ratio yet but the next time I brine I will use that ratio for sure. Good luck to you!
