As others have said, chickens over 1 year old slow or stop their egg laying when:
1. they molt their feathers;
2. the daylight hours are reduced coming into winter

Some breeds lay well even in winter darkness. Other folks deal with the pattern by adding artificial light to their coops, so the birds get more hours of (fake) sunlight. There is some disagreement about this because it may shorten the birds' lives.
