I have a RIR rooster that I wanted to cross to a both a blue and splash Ameraucana. That would be EEs, but would I have all blue chicks from both of those hens? Also if I crossed the RIR to an exchequer leghorn would that be black chicks?

You would get black and blue chicks from crossing your RIR to the ameraucanas. The splash hen will produce 100% blues, your blue hen will produce 50% black chicks and 50% blue. They will likely all have some varying degree of red leakage.

I believe you would black chicks from crossing to the exchequer, or just maybe a mix of black and white. I don't know if exchequer is made from dominant white, mottling, or both, so I can't say for sure. Probably just black chicks though.
