Risk having just 1 rooster if Breeding?

That's a whole lot of eggs you'll be getting especially having the 55's.
Yes, theoretically, but if I only keep 3 of each type each year, 2 hens and a rooster , and use the others just to replace current layers, it need not be that large a population of adult chickens. And if Inhatch as many as Incan to improve my flock or sell, the eggs won’t be available.

Since neither of these has a SOP tho, I have to decide what I’m breeding for exactly. Egg laying, vigor ,and temperament for sure.

I’m a beginner, my plans change frequently- but I need to make one to stick to for a few years
 
The least number of roosters you have, the better it works out. I would try and find some other chicken people who are interested in this breed - maybe that state thread? Or your local feed store, or 4-H group. Then if you had a wreck, you could get a back up.

I have had chickens since 2007 - yeah, never had the plan go through!
