roasted red peppers--WHAT TO DO WITH 'EM?

In my CSA basket today are a sackful of big red Marconni peppers, freshly fire-roasted. They're sitting on the kitchen counter right now, and I'm in here wondering what in the world I'm gonna do with them!

Any suggestions?
 
I roasted a few red peppers this year myself. I read that if you freeze them, they will maintain their flavor and consistency. That's what I did with mine. I also Googled roasted red peppers and found you can make oil with them.

Puree them with some roasted garlic to make a spread to go on burgers. Yummy!

MM, I wish I knew how to pack them properly in oil, too.​
 
I put them on sandwiches/wraps, chop them up into tomato/spaghetti sauce, and put them out on platters at parties. I eat them with humus. I always include them with my grilled veggies.
