Hello i had a question why do people cut the crest and the other thing of the rooster?i heard something about geting sick in the winter or something.

Do you mean the comb and wattles? That is called dubbing. I personally don't do that, but very large combs and wattles can become frostbitten in the winter time. That can become infected and make them sick, I guess.

Also, breeds like the Modern Game are often dubbed for showing.

It's a good idea, if you live in a climate with harsh winters, to put a layer of vasceline on your chicken's combs and wattles (or is it waddles). That will help prevent frostbite.
